Nicely juicy berry cake that can be made of fresh berries in the summer or frozen berries in the winter. A sweet mouthful that will bring a smile to your face and make you think back to summer. This recipe is developed in cooperation with the Põhjaka manor.

Base:
Mix together room temperature butter and sugar, add flour and finally one egg. Mix the batter well and place it to set in the fridge. After setting, push the batter with your fingers into the cake tin and bake for ten minutes in a 180℃ oven.
Filling:
Mix together sugar, eggs (2), sour cream and vanilla beans and add berries. Pour the mixture on the base and bake in a 150℃ oven for approximately 40 minutes. The baked cake must be slightly soft in the middle and golden brown on top.
