Cut tomatoes and onions into thick slices. Place in an oven pan. Crush the garlic and sprinkle over tomatoes. Sprinkle with olive oil and balsamic vinegar. Flavour with herb mix and salt. Bake at 200℃ for approximately 40 minutes.
Once the tomatoes are ready, fry the grill cheese on a hot pan for approximately 2 minutes on each side until the cheese is golden. Place the tomatoes and cheese on a plate. Sprinkle with seeds and fresh parsley. Eat immediately!
