This incredibly simple salad tastes divine! Bresto hard cheese matches well with the acidity of tomato and the light sweet taste from the basil sauce. Serve with a light cold wine, crunchy ciabatta slices and herb butter. Goes also well with grilled beef and poultry.
*this salad tastes delicious also when you add 100 g of green or red seedless grapes to the recipe!

Basil sauce:

Fresh basil

Juice from freshly squeezed lemons

Honey
|
|
Pinch of salt

Mild-flavour oil

Cherry tomatoes (you may use tomatoes of different colour and size)

Epiim's Bresto cheese
|
|
Large bunch of fresh basil leaves
|
|
Small handful of chopped curly-leaf parsley

Freshly ground pepper
|
|
Basil sauce
|
Place all sauce components in blender (or similar) and blend into homogenous sauce.
Halve tomatoes and cut cheese into cubes.
Add basil leaves, chopped parsley, freshly ground pepper and basil sauce, then mix.
Serve immediately.
